Prepare the steak
- Pat the steak dry with paper towels and slice it into thin strips against the grain. 2. Season with salt, pepper, and paprika.
Cook the noodles
- Bring a large pot of salted water to a boil. 2. Cook the egg noodles according to the package directions until tender.3. Drain and set aside.
Sear the steak
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. 2. Add the steak in a single layer. Don't overcrowd the pan. 3. Cook for about 1–2 minutes per side, just until browned. 4. Remove the steak from the skillet and set aside.
Cook the onions and mushrooms
- Reduce the heat to medium. 2. Add the remaining 2 tablespoons of butter. 3. Add the sliced onions and mushrooms. 4. Cook for 6–8 minutes, stirring occasionally, until the onions are soft and the mushrooms are nicely browned.
Add the garlic
- Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
Make the gravy
- Sprinkle the flour over the mushrooms and onions. 2. Stir and cook for about 1 minute. 3. Slowly pour in the beef broth, stirring constantly to prevent lumps. 4. Add can of French onion soup 5. Add the Worcestershire sauce. 6. Bring the mixture to a gentle simmer. 7. Cook for 3–5 minutes, until the sauce begins to thicken.
Add the steak
- Return the steak and any juices that collected on the plate to the skillet. 2. Stir everything together and simmer gently for 2–3 minutes. 3. Don't overcook the steak.
Add the sour cream
- Reduce the heat to low. 2. Stir a few spoonful's of the hot sauce into the sour cream in a small bowl. This gently warms the sour cream and helps prevent it from curdling. 3. Then stir the sour cream mixture into the skillet. 4. Heat gently for 2–3 minutes. Do not bring the sauce to a hard boil.
Taste and season
- Taste the stroganoff and add more salt, pepper, or Worcestershire sauce if desired.
Serve
- Spoon the creamy beef stroganoff over the warm egg noodles. 2. Sprinkle with fresh parsley.

For a richer gravy: Substitute ½ cup of the beef broth with heavy cream. For extra onions: Add another half onion if your family loves them.
