- Place chicken in a bowl with buttermilk and hot sauce. 2. Cover and refrigerate for at least 4 hours, preferably overnight. 3. Combine flour and seasonings in a large bowl. 4. Remove chicken from buttermilk, allowing excess to drip off. 5. Dredge thoroughly in seasoned flour. 6. Heat about 1½ inches of oil to 350°F in a heavy skillet or Dutch oven If you have a cast Iron Skillet this is what I use! 7. Fry chicken in batches so you don't overcrowd the pan. 8. Cook until deeply golden and the thickest pieces reach 165°F internally, usually about 12–18 minutes depending on size. Drain on a wire rack rather than directly on paper towels to keep the crust crisp.

I am 98 years old and have been cooking for a long time and I do experiment often. My stirring memories begin with my mom who knew how to cook with whatever money she had to spend during the great depression in the Thirties, World War II in the Forties, going on and on to the 2020’s . Making things nice and tasty and inexpensive. was always our goal. We are 4 generations of cooks from German to Appalachian flavors and the preservation of food, always to save money.
