Funeral Potato Casserole with Ham & Green Beans by Cindy
Potato casserole with ham, green beans, and bacon is that kind of hearty, all‑in‑one comfort dish that feels like it came straight from a cozy family kitchen, layering tender potatoes, smoky bacon, savory ham, and bright green beans into a warm, satisfying bake. Its roots draw from traditional American casserole culture, which grew in popularity throughout the mid‑20th century as home cooks looked for practical, budget‑friendly meals that could feed a crowd with simple ingredients. Over time, this combination became a beloved variation, celebrated for its rustic flavor, easy preparation, and the way it brings together classic pantry staples in one comforting dish.
Ingredients
Method
Preheat the oven
- Preheat your oven to 350°F. Grease a 9×13-inch casserole dish.
Prepare the creamy sauce
- In a large bowl, combine the cream of chicken soup, sour cream, milk, 1 cup of shredded cheddar cheese, salt, pepper, and garlic powder. 2. Stir until smooth.
Fill the casserole dish
- Spread the mixture evenly into the prepared 9×13-inch casserole dish. 2. Sprinkle the remaining 1 cup cheese over the top.
Make the crunchy topping
- In a small bowl, combine the crushed cornflakes with 3 tablespoons melted butter. 2. Sprinkle the buttered potato chips and French fried onions evenly over the cheese.
Bake
- Cover the casserole loosely with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for another 15–20 minutes, until the edges are bubbling and the topping is golden brown.
Rest before serving
- Remove from the oven and let the casserole rest for 10 minutes before serving. 2. This gives the creamy filling time to set slightly.
Grandma's Tip For the best flavor, use leftover Sunday ham or holiday ham. The salty, smoky pieces of ham are especially good with the creamy potatoes and green beans. If you want an even richer casserole, add ½ cup diced cooked bacon along with the ham. Make-Ahead Instructions You can assemble the casserole one day ahead. Cover tightly and refrigerate. When ready to bake, remove it from the refrigerator and let it sit at room temperature for about 20–30 minutes. Add the cornflake topping just before baking. Bake at 350°F for approximately 50–60 minutes, or until heated completely through and bubbling around the edges.
