
Mama J’s Macaroni Salad
Every summer, Mama J made one thing that brought the whole family running: her macaroni salad. It started with four boxes of Kraft Dinner, boiled and cooled on the counter while she chopped vegetables with the speed of someone who’d been feeding hungry people her whole life.Radishes for bite. Celery for crunch. Carrots for color. Dill pickles for that spark she swore “woke the whole bowl up.” Then came the dressing — two cups of Miracle Whip when she wanted tang, or mayonnaise when the day called for something softer and comforting.But the part everyone waited for was the eggs. Six hard‑boiled, sliced clean, laid across the top like a little crown. Mama J always smiled at that part, as if she were blessing the salad itself.When she mixed it all together, the kitchen filled with a smell that meant summer had officially begun. Kids grabbed plates, adults hovered, and Mama J stood back with her hands on her hips, pretending not to notice the praise.And every time someone took a bite, they said the same thing:“Nothing tastes like Mama J’s.”Because it wasn’t just macaroni salad. It was tradition. It was comfort. It was home.

- Boil the macaroni to package instructions and place into cold water right away to cool, set aside2. Add the eggs, radishes, celery, carrots and dill pickles to a serving bowl3. Drain the macaroni well and add to the bowl4. In a separate bowl, mix the miracle whip/mayo with the cheese packets from the macaroni. Once well mixed add to the salad and stir well to combine
Notes
You can also use some of the egg slices on top.
Add some green onion and paprika to the top.
Add more Miracle Whip/Mayo if you would like it to be creamier.
Salt and pepper and cheddar cheese cubes if desired. Serve it up in a bowl or as a side and enjoy!!
